Victoria Rhubarb This perennial vegetable is ‘Mountain Grown’ at Alpha Nursery and is an ‘Idaho Preferred’ Plant.

Victoria Rhubarb is a vigorous growing perennial vegetable in our area. It will grow to a height of 2' to 3' tall and just as wide. It will produce white flowers on a stalk in the middle of summer, but you will want to cut these off as they appear.
The flower stalks if left will tend to make the edible stalks tougher and stringy. Only the stalks should be eaten because the leaves contain moderately poisonous oxalic acid. The discarded leaves can be safely placed in the compost pile. Plant Victoria Rhubarb in full sun and well drained soil.
Victoria Rhubarb is low in calories, and is a good source of both vitamin C and calcium. It makes great pies, tarts, and Rhubarb Crisp. It freezes very well for later cooking.
