Horseradish
Horseradish is a hardy perennial with disease resistance and high yields. This perennial vegetable will grow to a height of 36" to 48" tall and 18" to 24" wide. It will produce white flowers in summer, but they are not really showy.
Plant cuttings in the spring and harvest the roots in the fall. Leave some roots for the next year's crop. Grated roots have a delightful tang. Planting Horseradish in a contained area or an area that it can be let go is advisable for Horseradish will spread aggressively if not controlled. Horseradish leaves are somewhat fragrant so deer tend to stay away.
