Purple Sage
Purple Sage is a fragrant herb that has a mounding habit. The leaves are bluish-green and light purple. It will produce purple flowers from early to midsummer that will attract hummingbirds and pollinating bees. It will grow from 12" to 24" tall and 12" to 18" wide. Plant in full sun to part shade and well drained soil.
Use Purple Sage as a border plant, Cottage Garden, perennial bed, or a container. Deer don't like fragrant foliage so they stay away from Sage. It is also drought tolerant once it is established.
Purple Sage leaves can be used as seasoning in Italian and Mexican dishes, soups, and stews. Purple Sage can be used fresh or dried. To dry the leaves, hang the Sage upside down in a warm location away from sunlight. When the leaves are dry, remove them from the stems and store the leaves in a tightly closed container for up to a year in a cool, dark location, such as a cupboard. Do not crush the leaves until they are ready for use as they may lose some of their flavor.
