Peppermint
Peppermint is a perennial herb that has fragrant, deep green leaves and lavender flowers that bloom in midsummer. The blooms will attract butterflies. It will grow to a height of 1' to 2' tall and just as wide. Plant in full sun partial sun in moist, well drained soil.
You will want to contain this herb as it is a vigorous grower. Peppermint sends out runners and can quickly take over an area. Plant in a isolated spot, grow it in a container, or sink a tub or barrel in the ground to contain the roots from spreading. Peppermint is deer resistant due to the fragrance.
Peppermint is used to flavor everything from mouthwash to candies, ice cream, and jelly. Peppermint is also used to make mint sauce that is served with roast lamb, or as a garnish for fruit salad. You can make Peppermint tea or add to a bath for a fragrant, relaxing menthol soak.
Peppermint can be used fresh or dried. To dry the leaves, hang the Peppermint upside down in a warm location away from sunlight. When the leaves are dry, remove them from the stems and store the leaves in a tightly closed container for up to a year in a cool, dark location, such as a cupboard. Do not crush the leaves until they are ready for use as they may lose some of their flavor.
