French Tarragon is a mounding perennial that has fragrant deep green leaves that taste like peppery, anise flavor with a tinge of vanilla. It will grow from 12" to 24" tall and 18" to 24" wide. It will produce greenish-yellow blossoms in midsummer. Plant French Tarragon in full sun to partial sun in well drained soil.
Use French Tarragon in a Cottage Garden, perennial border, or containers. It is deer resistant due to the fragrant foliage. French Tarragon is used for flavoring sauces, seasoning meats, and making wine vinegar. French Tarragon can be used fresh or dried. To dry the leaves, hang the French Tarragon upside down in a warm location away from sunlight. When the leaves are dry, remove them from the stems and store the leaves in a tightly closed container for up to a year in a cool, dark location, such as a cupboard.
