Italian Oregano
Italian oregano is one of the main herbs used for sauces and soups, especially Italian dishes. The aromatic leaves dry easily. Italian Oregano is sweet when used in cooking. It will grow from 12" to 24" tall and 18" to 24" wide.
Italian Oregano likes to be planted in full sun and well drained soil. In midsummer pink to purple blossoms will appear that will attract pollinating bees. Plant Italian Oregano in a Rock Garden, Cottage Garden, or container. Because of its fragrance, deer tend to stay away. Italian Oregano is also used in cooking, especially Italian cooking. If you are wishing to harvest the leaves, harvest oregano leaves when flowers begin to appear on the plant. Cut stems back to 2 inches above the ground. Place oregano sprigs into plastic bags and put the bags in the freezer to preserve the flavor. To dry the leaves, hang the oregano upside down in a warm location away from sunlight. When the leaves are dry, remove them from the stems and store the leaves in a tightly closed container for up to a year in a cool, dark location, such as a cupboard.
