Greek Oregano

Greek Oregano is a delightful herb that has fragrant green leaves. It will grow from 1' to 2' tall and 1' to 2' wide. In midsummer pink to purple blossoms will appear that will attract pollinating bees. Plant Greek Oregano in full sun and well drained soil.
Plant Greek Oregano in a Rock Garden, Cottage Garden, or container. Because of its fragrance, deer tend to stay away. Greek Oregano is also used in cooking, especially Italian cooking.
If you are wishing to harvest the leaves, harvest oregano leaves when flowers begin to appear on the plant. Cut stems back to 2 inches above the ground. Place oregano sprigs into plastic bags and put the bags in the freezer to preserve the flavor.
To dry the leaves, hang the oregano upside down in a warm location away from sunlight. When the leaves are dry, remove them from the stems and store the leaves in a tightly closed container for up to a year in a cool, dark location, such as a cupboard. Do not crush the leaves until they are ready for use as they may lose some of their flavor.
